Production of gamma amino butyric acid (GABA)from rice bran and mulberry leaf protein concentrate fo
In this study, glutamic acid content in different varieties of mulberry leaves (ML) was investigated. Mulberry leaf of Burirum 60 variety was selected for production of mulberry leaf protein concentrate (MLPc). The total glutamic acid content of Burirum 60 mulberry leaves was 0.94 mg/100 g of mulberry leaves. MLPc was prepared from ML by alkaline extraction using ML to water at a ratio of 1:4 (w/v) at pH 9.5, agitated for 45 min. The protein extract was adjusted to pH 3 for precipitation. Then, the effect of incubation time on free glutamic acid during hydrolysis of MLPc by alcalase at 60 oC. Hydrolysates from mulberry leaves protein concentrate (MLPcH) that showed the highest free glutamic acid content with the minimum hydrolysis time was at 8 hr (0.51 mg/g of MLPc). In addition, The effect of incubation time and ratio of rice bran and MLPcH on GABA content were studied.The GABA could beproduced by using rice bran to MLPcH ratio of 50 mg/ml ( mg of rice bran/ 1 ml of MLPcH), incubation time for 4 h. The obtained GABA was 0.10 mg/g of rice bran. The GABA was fortified to soy milk product at 3.1 mg/l. The overall acceptance score of this soymilk product was 4.8.
