ปัจจุบันปัญหาขยะพลาสติกจากบรรจุภัณฑ์อาหารส่งผลกระทบต่อสิ่งแวดล้อมอย่างต่อเนื่อง จึงต้องพัฒนาบรรจุภัณฑ์ทางเลือกที่ย่อยสลายได้ทางชีวภาพและสามารถตรวจสอบคุณภาพอาหารได้ งานวิจัยนี้มีวัตถุประสงค์ 1) เพื่อสกัดเพคตินสำหรับทำฟิล์มชีวภาพจากเปลือกแตงโมตรวจสอบคุณภาพอาหาร และค้นหาสภาวะที่เหมาะสมที่สุดในการสกัด 2) เพื่อสร้างฟิล์มชีวภาพจากเปลือกแตงโมตรวจสอบคุณภาพอาหารด้วยเพคตินที่สกัดออกมา และค้นหาสภาวะที่เหมาะสมที่สุดในการขึ้นรูปฟิล์ม 3) เพื่อทดสอบคุณสมบัติของฟิล์มชีวภาพจากเปลือกแตงโมตรวจสอบคุณภาพอาหาร และเปรียบเทียบประสิทธิภาพกับฟิล์มพลาสติก สำหรับใช้พัฒนาฟิล์มชีวภาพจากเปลือกแตงโมซึ่งเป็นวัสดุเหลือทิ้งทางการเกษตร ให้สามารถทำหน้าที่เป็นบรรจุภัณฑ์อัจฉริยะสำหรับตรวจสอบความสดของอาหารแบบเรียลไทม์ ผลการศึกษาพบว่าสภาวะที่เหมาะสมในการสกัดเพคตินคือการใช้สารละลายกรดไฮโดรคลอริกความเข้มข้น 0.1 mol/dm³ 100 cm³ และสารละลายเอทานอล 150 cm³ สำหรับสกัดเพคติน ฟิล์มชีวภาพที่เตรียมโดยใช้น้ำผึ้งเป็นตัวประสานในปริมาณ 3 g มีสมบัติเชิงกลดีและสามารถขึ้นรูปเป็นแผ่นฟิล์มได้อย่างมีเสถียรภาพ การเติมสารสกัดจากดอกอัญชัน ดอกต้อยติ่ง ดอกแพงพวย กะหล่ำปลีม่วง และสารจากธรรมชาติผสม ทำให้ฟิล์มเกิดการเปลี่ยนสีตามการเสื่อมคุณภาพของอาหาร ส่งผลให้สามารถตรวจสอบความสดของอาหารได้โดยไม่ต้องเปิดภาชนะบรรจุ ฟิล์มชีวภาพที่พัฒนาขึ้นมีความแข็งแรงใกล้เคียงกับฟิล์มพลาสติกทั่วไป แต่มีข้อได้เปรียบด้านการย่อยสลายได้ ลดการใช้พลาสติกสังเคราะห์ และเพิ่มมูลค่าให้วัสดุเหลือทิ้งทางการเกษตร ดังนั้น ฟิล์มชีวภาพจากเปลือกแตงโมจึงมีศักยภาพในการประยุกต์ใช้เป็นบรรจุภัณฑ์อาหารอัจฉริยะที่เป็นมิตรต่อสิ่งแวดล้อม
This article presents that plastic waste from food packaging has continuously impacted the environment, creating an urgent need to develop alternative biodegradable packaging capable of monitoring food quality. This research aimed to: (1) extract pectin from watermelon rind for producing a biofilm used in food quality monitoringand determine the optimal extraction conditions; (2) fabricate biofilms from watermelon rind using the extracted pectin and identify suitable film-forming conditions; and (3) evaluate the properties of the developed biofilm and compare its performance with conventional plastic films. The study focuses on utilizing watermelon rind, an agricultural waste material, to develop an intelligent packaging film capable of real-time food freshness monitoring. The results indicated that the optimal pectin extraction condition involved using 100 cm³ of 0.1 mol/dm³ hydrochloric acid solution and 150 cm³ of ethanol solution. Biofilms prepared with 3 g of honey as a binding agent exhibited good mechanical properties and stable film formation. The incorporation of natural extracts from Clitoria ternatea,Ruellia tuberosa, Catharanthus roseus, Brassica oleraceavar. capitataf. rubra, and natural substance mixes of pigments enabled the biofilm to change color according to food spoilage conditions, allowing food freshness to be monitored without opening the packaging. The developed biofilm demonstrated mechanical strength comparable to conventional plastic films while offering advantages in biodegradability, reduction of synthetic plastic usage, and value addition to agricultural waste materials. Therefore, watermelon rind biofilm shows strong potential for application as an environmentally friendly intelligent food packaging system.
